  While I cannot verify this recipe's Irish authenticity, I can verify that it is very tasty. Guiness Stew 2.5 pounds stew meat, cut into 1.5 inch chunks salt and ground black pepper 1 tablespoon vegetable oil, divided 1 onion, coarsely chopped 4 cups chicken broth 1 3/4 cups Guinness, reserve 1/4 cup 1 tablespoon light brown sugar 1 teaspoon dried thyme 1 ounce bittersweet chocolate, chopped 2 bay leaves 3 carrots.
