Coconut cream cupcake recipe and more

Nadine Fownes at Nova Scotia News is as enthusiastic about cupcakes as we are:

"... cupcakes are experiencing a huge upswing in popularity right now.

Brides and grooms are serving cupcakes instead of the traditional multi-tiered wedding cake. Specialty bakeries have popped up in just about every major city and small town, their pastry chefs trying to outdo each other with unique flavour combinations and whimsical, over-the-top decorations that look almost too pretty to eat.

The latest cookbooks and magazines are filled with glossy.

A few cupcake recipes we've noticed: Recipe for Auntie Em's Kichen's coconut cupcakes in the Los Angeles Times (see also Auntie Em's Kitchen) This billowy coconut cupcake is pretty irresistible. Hairy caterpillar cupcake recipe

photo by Melissa Punch/The Harvard Common Press Via MSNBC comes this recipe from The Birthday Cake Book by Dede Wilson. The color of the “hair” — tinted coconut — can be the birthday person’s favorite color. If someone wants a purple caterpillar, why not? Twenty-four cupcakes are arranged into a long caterpillar, so you will need a very large platter or a large piece of corrugated cardboard covered in foil to support this critter. Colored foils can be found in craft stores. To get the cupcakes to look round, the buttercream needs to be soft enough be workable but still firm enough so that it sticks to the cupcakes as you roll them around in the buttercream. Once the cupcakes are rolled in the coconut, they will be quite round. [lien] [EN]

Cupcake recipes from The Journal Gazette

Fort Wayne, Indiana's The Journal Gazette offers up several cupcake recipes, including basic cupcakes, brownie cupcakes, dried fruit cupcakes, and lemon meringue pie cucpakes, in an article on our favorite dessert: Cupcakes have been around since at least the 18th century, although they were called “queen” cakes way back then. Often, they were baked in decorative molds, but some simple recipes called for baking them in earthenware cups. Hence, the probable origin of the name. By the 19th century, cupcake recipes were included in all kinds of cookbooks. Some food historians say that, much like the pound cake recipe that included a pound of this and a pound of that, cupcake recipes used a similar cup of this and a cup of that strategy. [lien] [EN]

Recipe: Coconut Cream Stout

Recipe - Coconut Cream Stout: June 2nd9 Back in April I brewed up a coconut cream stout after being inspired both by the version periodically offered by Bend Brewing Company, and our spring break trip to Baker City. It’s drinkable now, and I’ve had a bit and shared a bit, and I have to say, I was very pleasantly surprised with how well it turned out. So I’m sharing the recipe for anyone who wants to brew some. This recipe is for a five gallon batch, and it’s essentially a Sweet Stout that’s extract-based with specialty grains. (If you do all-grain brewing, I’ll leave it to you to convert.) What I’m reproducing here is the recipe as I brewed it in April, though for future batches (there will be future batches), I may well tweak it. [lien] [EN]
